Spanish omelette


Spanish omelette
 

Ingredients
Ingredients for 4 people: 
-4 medium-sized potatoes
-6 eggs
-1 medium-sized onion (optional)
-olive oil
-salt.



Preparation
Peel, wash and dry the potatoes. Cut into thin slices and place them into a deep frying pan with olive oil at a medium temperature to brown cook slowly. After chopping into thin slices add the onion and fry slowly with the potatoes until golden brown. Stir occasionally with the scraper while using it to cut the ingredients. After some 10 minutes remove the potatoes and drain the oil.



Beat the eggs in a bowl, together with a little salt. Add the potatoes and the onion. Add a little oil to the frying pan before adding the entire mixture. Leave it at a low heat, covering the frying pan for some 5 to 10 minutes until the base of the omelette turns golden brown. Turn the omelette over using a pan lid and let it drop into the frying pan, brown-side up, leaving it to settle. Gently fry the omelette until golden-brown on both sides.
